Slow Cooker Firecracker Chicken Meatballs

One thing you can do to make things easier for yourself is keep a running list of foods that each family member likes and dislikes. Once you’ve gathered what everyone likes, then search for recipes with those ingredients. Here’s a recipe for Slow Cooker Fire Cracker Chicken Meatballs that went over really well with my entire family, including my 17 month old daughter. 👶🎀
 
 
YIELDS: About 35 meatballs        
SERVING SIZE: 4-5 meatballs
SERVES: 8

COOK TIME: 2 hr. 10 mins.
 
 

INGREDIENTS

For the Chicken Meatballs
¼ cup blanched almond flour
¼ cup nutritional yeast
2 tablespoons flax meal
½ cup coconut milk, full fat
2 pounds ground chicken
1 egg
2 teaspoons dried parsley
1 teaspoon Italian seasoning blend
1 teaspoon Garlic, minced
½ teaspoon sea salt
¼ teaspoon black pepper
 
For the Firecracker Sauce
¼ cup coconut oil, melted
2 tablespoons ground fresh chili paste
2 tablespoons natural ketchup
1 tablespoon apple cider vinegar
2 teaspoons Worcestershire sauce
pinch of granulated garlic
sprinkle sea salt
½ cup coconut palm sugar
3 tablespoons coconut aminos
 
For garnish
2 tablespoons fresh parsley, minced
dash of Red Pepper Flakes
 

 

DIRECTIONS

1. Combine the almond flour, nutritional yeast, flax meal and coconut milk in a large bowl. Stir together and let soak for 5 minutes.
 
2. Line a rimmed baking sheet with foil and lightly spray with olive oil.
 
3. Add the ground chicken, egg, dried parsley, Italian seasoning, garlic, salt and pepper. Mix well.
 
4. Form into 35 meatballs, placing the meatballs on the prepared baking sheet.
 
5. Spray the tops of the meatballs lightly with olive oil.
 
6. Place the meatballs under high broil for 5-8 minutes, until lightly browned. Watch closely to avoid burning!
 
7. Combine the Firecracker sauce ingredients in a bowl and mix well.
 
8. Pour a little Firecracker sauce into the bottom of the slow cooker. 
 
9. Transfer the meatballs to the slow cooker and pour in the remaining Firecracker sauce.
 
10. Cover and cook on low for 2 hours.
 
11. Serve warm with a sprinkle of fresh parsley and a pinch of red pepper flakes.
 
 

NOTES:

  • Use a small cookie scooper (size #60) to create consistently sized meatballs.
  • Serve over a bed of cauliflower rice 🍚 for a balanced meal. Costco even has pre-made bags of it in their frozen section. Talk about a time saver! 
  • Feel free to swap the ground chicken for ground turkey.
