Apple Cinnamon Crunch Overnight Oats

Who said eating vegan meant sacrificing taste? Too often when people hear the word vegan, they assume whatever food is being talked about will taste gross or at best have no taste at all. Well folks, that is false. Vegan food often times doesn’t taste “as good” because the foods so many people are accustomed to are loaded with sugar, unhealthy fats, and other unhealthy things. Guess what… I have a healthy vegan breakfast recipe that you’re going to like.
 
Chicken out the following recipe for a yummy vegan breakfast recipe for Apple Cinnamon Crunch Overnight Oats. It does not take long to prepare AND it packs great flavor! I love this simple recipe 🙂 Feel free to use your favorite seasonal fruit in place of the apples for a breakfast all year round.

INGREDIENTS

  • ½ cup Quaker Old Fashioned Oats
  • ½ cup almond milk
  • ½ cup diced apple
  • a small squeeze of lemon (to keep the apples fresh overnight)
  • ⅛ teaspoon cinnamon
  • 1 tablespoon granola (I made one similar to this recipe)
  • 1 teaspoon honey (sub maple syrup if vegan)

INSTRUCTIONS

  1. Combine the oats and almond milk in a jar.
  2. Toss in the apple with a little bit of lemon juice.
  3. Add the apple to the jar with a sprinkle of cinnamon.
  4. Chill overnight.
  5. In the morning, top with granola and a drizzle of honey or maple syrup.
