Stop to Smell the Roses

Our world moves at a much faster pace than it did just a few decades the go. I think many people agree that as a society we needed to slow down a bit. Honestly, I think the pandemic has helped with that. It forced many to slow down and stop to smell the roses. I know it did for me. COVID-19 forced me to re-evaluate my priorities placing family and my health at the top. In the meantime, I found some great recipes that I want to share with you, including one for Veggie Frittata Muffins. 

Since so the convenience of going out to eat was not available, my family cooked more at home. Spending time together as a family prepping meals together was fun and a great way to bond and build memories in the process. I’ll admit, it took up a good amount of time, but it was well worth it seeing that in the process we demonstrated to our daughter how to prepare healthy foods.

Not only did the pandemic make me realize the importance of slowing down, but also the importance of preparing healthy foods, especially since gyms were closed. We had to focus even more so on what we were fueling our bodies with. It’s 75% about what you eat and only 25% the exercise piece. Therefore, even if only focusing on nutrition and only walking, you can still lose weight and/or stay in shape. Below I’ll attach a recipe for Veggie Frittata Muffins that you can prepare. Making sure I load you up with plenty of healthy recipes to keep you on track so you can reach your goals.

Health and Convenience

So maybe you’re one of those fortunate individuals who was able to keep your job during the pandemic and you’re still going full speed on all four cylinders… listen, take your lunch break, your evening, your weekends, your holidays, and your PTO. You agreed to a job in exchange for pay and benefits. You did not sign up to sell your soul and every moment of your personal time. Your job is not your life. It is a job. Jobs come and go, but last time I checked, we only get one life to live.

“I don’t have enough time,” is a phrase I hear frequently. I agree that there never seems to be enough time. Guess what though? You’re not going to magically find more time. You have to MAKE THE TIME for the things that are important to you. Your health should be the top of that priority list. With that being said, health and convenience don’t always go hand and hand. This requires some additional planning on your part. Plan your recipes, grocery shopping, meal prepping, look ahead at menus before ordering in or going out so you can pick a healthy option, schedule your workout in your calendar like an appointment, etc. Make a conscious effort to take care of yourself. Start by fueling your body with the right kinds of food. You DESERVE to be happy and healthy.

 

The Recipe

This vegetarian recipe is quick and easy to make regardless of your culinary skill level. Thanks to @JeanineDonofrio for providing it. A couple bonuses: it doesn’t need a ton of ingredients; mini-frittatas are the perfect make-ahead breakfast, they keep well in the fridge for up to 2 days; AND you can freeze them. I recommend making a double batch then freezing half. That way all you have to do is pull out a serving when you’re short on meal prep time. Simply pop it in the microwave and voila!

SERVES: 12

PREP TIME: 10 mins. / COOK TIME: 20 mins.

INGREDIENTS

  • 8 large eggs
  • ⅓ cup unsweetened almond milk
  • 1 garlic clove, minced
  • ¼ teaspoon Dijon mustard
  • ½ teaspoon sea salt
  • freshly ground black pepper
  • 2 to 4 tablespoons chopped fresh dill
  • 2 small kale leaves, finely shredded
  • 1 cup halved cherry tomatoes
  • ¼ cup scallions
  • ⅓ cup crumbled feta

DIRECTIONS

  1. Preheat the oven to 350°F and brush a nonstick muffin pan with olive oil or nonstick cooking spray.
  2. In a large bowl, whisk together the eggs, milk, garlic, Dijon mustard, most of the dill (reserve a little for garnish), salt and pepper.
  3. Pour just a bit of the egg mixture into the bottom of each muffin cup.
  4. Divide the kale, tomatoes, scallions and feta into each cup then pour the remaining egg mixture on top.
  5. Bake for 20 to 22 minutes or until the eggs are set.
  6. Season with salt and pepper to taste and garnish with the remaining dill.
  7. Store any remaining frittatas in the fridge for up to 2 days.
