Healthy Breakfast Smoothies

Not sure about you, but I’m the type of person who NEEDS something to eat first thing in the morning. Ever heard of hangry (a.k.a when someone gets angry because they’re super hungry)? Yep, it’s a real thing. Just ask my relatives. It isn’t pretty. With that said, I don’t like spending tons of time prepping things for their sake or mine. I likes recipes that are easy to make first thing in the morning to get my metabolism going. Healthy breakfast smoothies are perfect for this!

The following healthy breakfast smoothies do the trick. They don’t take much time to make and are healthy. Thank to Jeaninne Donofrio @LoveandLemons for providing these. Prep fruits and veggies ahead of time to make blending these healthy breakfast smoothies a breeze on busy mornings. Below are the ingredients and instructions for how to make five different smoothies. Give them a try and let us know which one is your favorite!

Cinnamon Coffee Smoothie

Check out this yummy Cinnamon Coffee Smoothie recipe. Made with dates and almond butter, this Cinnamon Coffee Smoothie is the perfect healthy breakfast or snack. It’s vegan and gluten-free! Serves: 2

INGREDIENTS

  • 1 frozen banana
  • 1 Tablespoon almond butter
  • 2-4 tablespoons concentrated cold brew coffee or espresso
  • 4 ice cubes
  • ¾ cup almond milk, more as needed to blend
  • 1 teaspoon cinnamon
  • 1 heaping Tablespoon maca powder, optional*
  • 1 Tablespoon. vanilla protein powder, optional*
  • 1 medjool date or sweetener of your choice, optional

INSTRUCTIONS

  1. Add all ingredients to a blender and blend until smooth.
  2. Add more almond milk, as needed.

Butternut Squash Breakfast Hash 

SERVINGS: 2

INGREDIENTS

  • 2 cups cubed butternut squash
  • 1 tablespoon extra-virgin olive oil, plus more for drizzling
  • ⅓ cup chopped scallions
  • 1 small zucchini, cut into 1-inch pieces (1½ cups)
  • 1½ cups chopped broccolini or broccoli florets
  • 2 tablespoons minced fresh rosemary or sage
  • 1 teaspoon balsamic or sherry vinegar, or fresh lemon juice
  • 1 garlic clove, finely chopped
  • 3 kale leaves, stemmed and chopped
  • 3 to 4 fried eggs
  • Sea salt and freshly ground black pepper
  • A few pinches smoked paprika (optional)
  • Thinly sliced radishes, for garnish (optional)

  • 1 1/2 cup raspberries
  • 1 cup strawberries
  • 1/2 frozen banana
  • 1 cup almond milk, or oat milk 
  • 1 tablespoon honey or maple syrup
  • 1 1/2 cups ice
  • Handful of mint or basil, optional

Butternut Squash Breakfast Hash

You may have noticed a recent trend with my recipe posts… lots of breakfast recipes. It’s because I LOVE breakfast and brunch food! When I still lived downtown Chicago, “brunching” was a weekly occurrence pretty much every weekend. Friends, family, coworkers, and I hit up all kinds of place around town. We’d usually not only get the wristband that allowed us open all to the entire buffet spread, but we tended to purchase the bottomless mimosas too… after awhile it gets pricey. Plus, now I have a toddler. Now, instead of going out for brunch or breakfast every weekend, I  experiment with different recipes at home. Not only has this cut costs, but it also has been much friendlier on my waistline.
